Fish stu in blu dish

This is one of my favorite everyday fish dinners. It is basically quite healthy unless you do like me and over eat. Furthermore it is quick to make, with only 10 minutes in preparation and 30 minutes of baking time. And on a busy work day it is nice to only work for 10 minutes, have a half hour brake before dinner is ready.




Start with warming water with no salt and turn the oven to 200 degrees Celsius. Then peel (not really necessary) and dice 5-6 smallish potatoes (1) and add them to the boiling water. While waiting for the potatoes to become almost finished (which takes 7-8 minutes) dice 2 carrots, cut up some broccoli, half a leek and half a red onion (2 and 4). Cut 500 grams of white fish (3, we use pollock, but any type of fish can be used). 



Add all the ingredients to a casserole (1), preferably blue (2), with a lid ;) I prefer having the potatoes at the bottom, then the fish and the vegetables on top. What really makes this dish yummy is the seasoning. Add 2 tablespoons of margarin, 125 grams of light sour cream and dried tomatoes in oil, (3, my favorite). 

Bake the stu for 20-30 minutes (until the fish is cooked through). This is enough for at least 3 people.
